Spinach Mushroom Frittata


  • 10 Farmland Fresh Dairies large eggs, beaten with 1/2 cup Farmland Fresh Dairies Light Cream
  • 1 large onion, sliced
  • 2 tablespoons vegetable oil
  • 16 oz. fresh spinach
  • 12 oz. fresh mushrooms, sauted in oil until brown
  • 2 cups shredded gruyere cheese
Preparation Step one - Preheat oven to 375 degrees F.

Step two - In 10" nonstick, oven proof skillet, heat oil. Saute onion with salt and pepper until caramelized. Add spinach and stir until softened.

Step three - Add eggs to skillet, then cheese and mushrooms. Give a quick stir to combine ingredients. Let sit on low flame for 5 minutes.

Step Four - Transfer to oven for about 35 minutes or until cooked through.

Preparation time - 1 hour
Yield - 8 to 10 servings
